Honey Fermented Cranberries

It's that time of year again, time to start preparing a few things for Indigenous People's Day, or as some say Thanksgiving. I prefer to think of it as a celebration of the harvest. And cranberries, a native here, are an important part of that. This recipe is ridiculously easy and absolutely delicious!
I didn't invent this recipe at all. I've seen versions of it elsewhere, including GrowCookForageFerment, which is a great source.

Prepare the cranberries
Cranberries are a bit tough on the surface, so breaking them open a little will help get the fermentation going. To do this, I poke each berry with a fork. This sounds tedious, but it really isn't so bad.
Assemble
Put the cranberries and spices in the jar, leaving an inch of headspace. Add the orange juice and zest, then cover it all with the honey. Check the jar every day and give it a little shake, to make sure the cranberries are always coated with honey.
To serve, simply use a fork or slotted spoon to scoop some berries into a serving bowl. Save the honey when the berries are gone, and use it any way you would use honey. I like to add it to plain yogurt for a little treat.
