Dried Apples
Description
Every year, a friend or three will offer me sacks of apples, and there's just no way I can eat them all! Often, they have blemishes on them, or they have a weird shape. This always happens when I have plums, quinces, and medlars coming in, so I like to keep it simple and easy.

Prepare the apples
Wash your apples well. If you like, peel them, but this isn't necessary. Slice them about 1/4 inch thick. It doesn't matter which way you slice them, just so they're about 1/4 inch thick. If you like, sprinkle a little cinnamon on them. This last step is totally optional.
Dry the apples
Spread the apple slices out on the food dryer shelves. Don't let them overlap! You want the air to flow all around them. Turn the dryer on to 115-120 F (46-49C) and let it run for 24 hours. Check your apples and turn them over if needed. If they're not dry by 24 hours, keep running the dehydrator. The apples should not be moist at all. Store in a jar or ziplock and freeze for a few days to kill any eggs that could hatch on them. Remove from freezer and store in your pantry. These are so useful. I take them on trips and hikes, and I use them in muffins and other cakes. Enjoy!
